Drumming On The Peruvian Pacific Coast…  I have been enjoying ceviche (raw fish with lime, onion, cilantro and spice) everyday the past week as well as mangoes 30 cents a pound!… gaining back some lost weight from the mountains… today there were two women drumming on the beach, so I asked them if I could join them and go get my drum… hehe… ****yeah it’s fun to trance out with people who know how to enjoy the experience****…. hours later….  I’m still pleasantly surprised how much more the drum is welcomed to everyday life in latin america…  I was plied with green goddess, food, hugs and kisses… the secret to meeting family all over the world is more than just carrying a big drum though… it’s when you reach a door of opportunity that has writing on it, does the writing say “alone” or “all one”? http://www.indianinthemachine.com

  1. I love Ceviche. How about those pisco sours st every meal? That’s what wrong with America. …we need a national drink!

        Rocoto is a Peruvian red hot pepper. It almost looks like a red pepper, but smaller and rounder, and it is certainly quite hot!

        I make hot sauces with it or just chop it up and add it to any dish.

        The other famous Peruvian pepper I love is Aji Amarillo (yellow hot pepper). Not quite as hot, but very flavorful and it combines well with any soups, stews, meats potatoes or any other dishes.

        The most famous dish were Aji Amarillo is used is in Papa a la Huancayina, where it is blended with Queso Freso (white cheese) and served over potatoes on a lettuce bed, garnished with hard boiled eggs and black olives.

        I also utilize Aji Amarillo in Causa de Atun or Pollo, which is almost like a cold version of Shepherd’s Pie, stuffed with chicken or fish. I love cooking/preparing all my native dishes!

        Ceviche is awesome and very healthy. Can make it with just about any meat, but made with fish (sea bass), shrimp and other seafood is most popular. A make a kickass ceviche as well as other Peruvian dishes just because I love to eat good food! LOL
